Why Bananas?

You might be wondering, "Bananas in a savory dish?" Yes, exactly! Today, we're using ladyfinger bananas, which are slightly under ripe. These bananas bring a unique flavour and texture to the fritters and blend beautifully with the rest of our ingredients.

Ingredients You Will Need

For the Banana Chicken Fritters:

- 5 green ladyfinger bananas

- 1 whole onion, diced

- 1kg of chicken mince

- 2 large eggs

- 1 cup of plain flour

- 4 garlic cloves

- 2 teaspoons of smoked paprika

- 1 teaspoon of cumin

- 1 teaspoon of cayenne pepper (optional for extra kick)

- 1 tablespoon of coriander

- 1 tablespoon of parsley

- Salt and pepper to taste

For the Honey Mustard Dipping Sauce:

- ½ a cup of Greek yogurt (or a mix of a ¼ cup sour cream and a ¼ cup cream cheese)

- 4 tablespoons of Dijon mustard

- 2 tablespoons of honey

- A pinch of salt

- 2 teaspoons of lemon juice

Step-by-Step Instructions:

 Preparing the Banana Chicken Fritters:

1. Boil the Bananas: First, boil the green bananas for about 20-30 minutes until they soften. You'll know they're ready when they split open, and a knife comes out with less starch.

2. Mix the Ingredients: In a large bowl, mash the bananas, then add diced onion, chicken mince, eggs, flour, garlic, spices, salt, and pepper. Stir everything until well combined.

3. Chill the Mixture: Allow the mixture to rest in the fridge for 15-20 minutes to firm up slightly.

Making the Honey Mustard Dipping Sauce:

1. Mix Ingredients: Combine yogurt (or sour cream and cream cheese), Dijon mustard, honey, salt, and lemon juice in a bowl. Mix until smooth and well combined.

2. Chill the Sauce: Place the sauce in the refrigerator to let the flavours meld together.

Cooking the Fritters:

1. Form the Patties: Shape the chilled chicken mixture into patties, roughly 3 inches in diameter.

2. Fry the Patties: Shallow fry them in your choice of oil (I'm using tallow). Cook each side for about 2-3 minutes until golden brown.

The Taste Test

These fritters brown beautifully and have a delightful texture reminiscent of fried potato. The bananas, surprisingly subtle in taste, add a healthy twist to these chicken patties. Without the dipping sauce, they're already delicious, but the honey mustard sauce takes them to another level. Together, they're simply made for each other.
